Background

Single Pot Still Irish whiskey is a category unto itself — one that defines Irish whiskey on the world stage like no other. At The Shed Distillery in Drumshanbo, Co. Leitrim, Head Distiller Brian Taft has embraced this uniquely Irish tradition and is pushing the craft to delicious new heights. The Drumshanbo Single Pot Still Irish Whiskey is triple-distilled using a mashbill of malted Irish barley, un-malted Irish barley, and a small percentage of Irish Barra Oats — a combination that is key to the whiskey's signature character. Un-malted barley brings spice and depth; malted barley delivers sweetness and body; and the Barra Oats contribute a distinctive, elegant creaminess that elevates the spirit into what Taft calls 'Premier Grand Cru' territory. Aged primarily in single-use Kentucky Bourbon casks from American oak — which impart vanilla and caramel sweetness — with a portion in Sherry Oloroso casks for warmth and honeysuckle notes, this whiskey is bottled with no added color and without chill filtration. The result is a whiskey with luxurious mouthfeel and a finish that lingers long after the last sip.

Aging

The whiskey ethos at The Shed Distillery prioritizes exceptional quality over quantity and all whiskey is made in small quantities and never rushed to a deadline. Triple-distilled in copper pot stills at The Shed Distillery from a mashbill of malted Irish barley, un-malted Irish barley, and Irish Barra Oats. Aged primarily in single-use Kentucky Bourbon casks from American oak, with a portion matured in Sherry Oloroso casks. No color added, non-chill filtered.

Tasting Notes

Rich pot spice, vanilla, and dried fruit on the nose; complex fig, Oloroso sherry, and toasted oak on the palate. Creamy and full-bodied, with a long, elegant finish.
