This time, the journey took Rigney to the vibrant, color-saturated landscapes of Brazil, where he discovered the abacaxi — the locally prized Brazilian pineapple, known for its refreshingly sweet and tangy character unlike any other variety. PJ saw immediately how this extraordinary ingredient could add a new dimension to Drumshanbo Gunpowder Irish Gin, and he brought it back to The Shed. Slow-distilled by hand in medieval copper pot stills, the abacaxi is incorporated alongside the 8 pot still and 4 vapor-infused botanicals that underpin the classic Gunpowder expression — Chinese gunpowder tea, Irish meadowsweet, and exotic spices gathered across nine countries.
