For over 130 years, Bodegas Williams & Humbert have been producing the finest sherries and brandies as well as a diverse portfolio of spirits, utilizing one of the most traditional methods of ageing, the solera method. Founded in 1877 by Sir Alexander Williams and Arthur Humbert, Bodega Williams & Humbert helped to establish the creation of the Jerez-Xrs-Brandy Quality Demarcation. The Bodega is now owned by the Medina family, a local winemaking family with long roots in Sherry production. Family-owned and operated, they produce a variety of high quality sherries using the traditional solera aging method, whereby small amounts of younger wines are systematically blended with more mature wines over a period of time.
Produced using only buds for our best vineyards. Put into the classical Jerez Criaderas y Soleras system of dynamic ageing at the 15th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American with a capacity of 30 and 36 @. Aged for at least 8 years, after which it is transferred to the 6th criadera for an additional 22 years of natural ageing by oxidation until it reaches the solera. It is then removed for consumption.
Produced using grapes dried under the sun for 15 days in the drying yards. Fortified until it reaches 18 C, after which it undergoes physical-chemical ageing in the Criaderas y Soleras system for at least 20 years.
Produced using on buds from only our best vineyards. . Put into the Criaderas y Soleras system in our fino sherry casks for biological ageing. Sporadically, circumstances cause the contents of some casks to behave differently than is hoped they will not become fino sherry. These casks are cut (hence the term cortado) with one or two jugs of alcohol to form the base of the palo cortado solera system. The wine is then aged for 20 years until it reaches the solera.
Dry Sack 15 Year-Old is a rare indulgence to be enjoyed as a dessert wine or after-dinner drink - a sophisticated alternative to a port or single-malt. A blend of 78% Dry Oloroso and 22% Pedro Jimenez Sherries. Aged for at least 15 years, each Sherry style is first aged in its own Solera system and then blended in a third Solera.
