The Curious Paloma - Drumshanbo Gunpowder Irish Gin


  • 1 oz Drumshanbo Gunpowder Irish Gin
  • 1 oz Tequila Bribón Blanco
  • 0.75 oz fresh lime juice
  • 0.5 oz black pepper simple syrup
  • Grapefruit soda
  • Grapefruit wedge & salt (for garnish)


  • Prepare your black pepper simple ahead of time: Combine 5 cups of white granulated sugar, 2 tablespoons black peppercorns, and 2 cups of water in a saucepan. Bring to roughly 176°F and let cook gently for 30 minutes, stirring occasionally. Cool to room temperature before straining though a cheesecloth, bottling, and refrigerating.
  • Rim a chilled Collins glass with salt and carefully add ice.
  • Add gin, tequila, black pepper simple, and lime juice; stir vigorously for 10 seconds to combine.
  • Top up with grapefruit soda; stir once again to gently mix.
  • Garnish with grapefruit wedge.
