TERROIR & VINTAGE NOTES

Winemaking & Aging

Each variety is harvested and vinified separately, allowing the grapes to reach perfect ripeness. Following de-stemming, the juice is kept on the skins for several days at low temperatures to extract the fruit’s aromas and color.

Rosso Roast & Toast

Ingredients
  • 2 TBS red wine syrup (¾ cup Roscato Rosso Dolce + 1½ cups sugar; makes about 1½ cups)
  • 2 tsp chocolate syrup (optional, but recommended)
  • 2 shots (approx. 2 oz) hot espresso or 4 oz strong brewed coffee
  • ¼ cup steamed milk
  • 1-2 large marshmallows or a dollop of marshmallow fluff, for topping
  • Chopped chocolate or cocoa powder for garnish (optional)
Directions
  • Make the Red Wine Syrup: In a small saucepan over medium heat, combine the red wine and sugar. Whisk constantly until the sugar completely dissolves. Bring the mixture to a simmer, then immediately remove from heat and let it cool completely. The syrup can be stored in the fridge for up to two weeks.
  • Assemble the Latte: In a mug, add the red wine syrup and chocolate syrup (if using). Pour the hot espresso or strong coffee directly over the syrups and stir to combine. In a separate pitcher, steam and froth the milk. Pour the steamed milk into the mug over the coffee mixture.
  • Add the Marshmallow: Place a large marshmallow on a skewer or a dollop of marshmallow fluff on top of the drink. Carefully use a kitchen torch to toast the marshmallow or fluff until golden brown and slightly charred in spots. Alternatively, you can use your oven's broiler, watching closely to prevent burning. Garnish with chopped chocolate or a sprinkle of cocoa powder, if desired. Enjoy this unique and cozy beverage by the fireside.
