Cloud90 hails from Trentino, Italy — a truly heavenly place to make wine. Vineyards in this bucolic region benefit from dramatic diurnal temperature shifts, caused by warming breezes that sweep across nearby Lake Garda and alpine air that flows down from the Dolomites. These conditions promote intense aromas and flavors in the grapes.
Trentino’s combination of the right soils, altitudes, temperatures, and sunny, southern exposures — along with painstaking vineyard management — is the perfect recipe for viticultural excellence.
Lighter Wine Begins on the Vine
How does the Cavit team make Cloud90 low in alcohol and calories? It’s all natural. The secret is an earlier harvest of top-quality fruit. As grapes ripen, they develop higher levels of sugar, which result in more alcohol and calories in the wine they produce. So, by harvesting the pinot grigio a little earlier than normal, the grapes have less sugar, and in turn, yield a naturally lighter wine.
The grapes are all hand tended by Cavit’s network of heritage family growers (who account for 60% of Trentino’s grape cultivation). The relatively small average plot size — .81 hectare / two acres — allows for every vine to receive highly attentive care. This level of nurturing helps ensure that each growers’ grapes meet Cavit’s rigorous quality and consistency standards. Every single grape must represent the absolute best varietal characteristics and express their unique terroir, which the Cavit team has mapped extensively using PICA. This revolutionary vineyard mapping program allows Cavit and its growers to collaborate on key viticultural decisions, including the exact time to harvest each vineyard block.
Naturally Low in Alcohol
Led by winemaker Fabrizio Marinconz, the Cavit team crafts Cloud90 using traditional winemaking techniques. They softly press the grapes to avoid extraction of the skins’ natural pink color. Fermentation is conducted using selected yeasts and temperature control (20°C / 68°F). Then, the wines are finished in stainless-steel tanks, stabilized, and bottled.
Thanks to the team’s careful, timely harvesting, Cloud90 is naturally low in alcohol. They never need to resort to chemical alteration via spinning or other methods, which can remove flavor in addition to alcohol. That’s why Cloud90 is fresh, light, and crisp with deliciously full flavor.
An Inspiring Local Talent
Fabrizio Marinconz is a native to Trentino (one of the most prolific wine regions in Italy). He earned his undergraduate degree from the University of Trento and his graduate degree from Rheinmain University — known for practice-orientated training. Fabrizio began his career building his skills with some of the most accomplished winemakers throughout Italy, the U.S., and New Zealand, returning home to Trentino to work for Cavit in 2006.
In 2020, Fabrizio was given the key position of Associate Winemaker and is now fully responsible for the production of all Cavit wines. Fabrizio has been instrumental at blending traditional winemaking with forward-thinking creativity.
