An innovative winemaking spirit and adherence to quality elevates the Copper Series to where modern style meets classic finesse. Traditional European varietals and blends pair with innovative vinification techniques championed in Australia, such as co-fermentation and use of wild yeasts. Grapes are sourced from exceptional vineyards with ideal terroirs for each specific varietal.
VinificationPerfectly ripe fruit undergoes natural barrel fermentation using wild yeasts & maturation in French Oak. After fermentation, the wine is left on its lees for 3 months. After several rackings the wine matured in oak for an additional 12 months.
NoseInitial seductions of rose petal play delicately with flint, lemon rind and stone fruit.
