BackgroundMandrarossa wines were born out of a mission for excellence when a team of industry experts joined forces to create high quality wines of both indigenous and international varietals from Sicily to introduce to the world. This team of experts identified top estates that yield the best quality and worked closely with select growers to deliver the truest and highest valued expression of the selected varietals offered by Mandrarossa wines. Ideal microclimatic conditions of intense sunlight, coastal sea breezes and rich chalky soils combine to produce these rich, aromatic wines. A Sicilian icon, Cartagho is Mandrarossa's premium wine from a selection of only the best Nero d'Avola vineyards on the estate. Cartagho epitomizes the authenticity of Sicilian elegance.
VinificationRipe Nero d’Avola grapes are harvested the first week of September. The grapes are destemmed and crushed as soon as they arrive at the winery and then transferred to temperature-controlled stainless steel fermenters. Fermentation takes place for 10 days at a temperature of 72°-75°F. The yeasts are selected by the winemakers to maintain varietal and regional expression. A system of rack-and-return and traditional pumping-over provides gentle extraction of deep color and fine tannins while retaining fruit characters. Post-fermentation maceration, which accentuates the development of soft tannins and a greater degree of complexity in the wine, lasts for 7 days. The wine then matures in French oak barriques for a minimum of 12 months, followed by 4 months of aging in the bottle before it is released.
