With the successful release of its debut wine at the beginning of the 1990s, Margalit became Israel’s first official boutique winery. That wine, a 1989 Cabernet Sauvignon, met with immediate acclaim and swiftly earned Margalit a devoted following and a reputation for superb quality.
For father-and-son winemaking team Dr. Yair and Asaf Margalit, Margalit’s premier wine represented the triumphant outcome of several years of intense study and experimentation cultivating traditional Bordeaux varieties in the exceptional terroir of Israel’s Upper Galilee region. Today, the winery focuses its attention exclusively on Cabernet Sauvignon, Cabernet Franc and Merlot and produces approximately 1,500 cases annually.
A chemical-physicist, winery founder Dr. Yair Margalit is a faculty member of the Food Engineering School at the Israel Institute of Technology, author of several wine-related books and a frequent speaker on the subjects of winemaking technology and chemistry.
Margalit owns two vineyards from which it sources all of its grapes. The first, in the upper Galilee Mountains at an elevation of 800 meters, is planted with Cabernet Sauvignon and Merlot. The second vineyard, located near the village of Binyamina, is dedicated to Cabernet Franc.
Margalit wines are characterized by aromas of forest berries and cigar box and are dark, full-bodied and intense on the palate. Enjoyable in youth, they can withstand more than 10 years of cellaring.
