Sella & Mosca is one of Italy’s most impressive and progressive wine estates and widely credited with placing Sardinian wines on the wine-lover’s map. Thilion from the Sella & Mosca estate on the Mediterranean island of Sardinia is an original and deftly crafted blend of two white grapes: Torbato, a variety imported centuries earlier from Spain, and Sauvignon Blanc. Both flourish in the coastal vineyards of a small promontory of land known to ancient geographers as Thilion, on the island’s scenic northwest coast. Together they illustrate this Italian island’s ability to produce unique and compelling world-class wines.
Sella & Mosca is the last preserve of Torbato in Sardinia. Where other growers have abandoned this high-maintenance variety, Sella & Mosca has dedicated resources to protecting this precious legacy of Sardinia’s ancient winemaking heritage. Sauvignon Blanc has been nurtured in the vineyards of Sella & Mosca since the early 1900s, specifically in the sand-rich soil of the property’s Arenarie vineyard.

Vinification
Grapes are harvested at the coolest time of day, with the shortest possible interval of time between picking and delivery to the winery. Each variety is subject to a gentle crush, and a brief cold maceration, to enhance the extraction of flavor. After settling and clarification the musts are fermented at a low temperature for about 20 days in French oak and acacia wood barriques. The two varieties are then blended and aged a further four months. Careful attention is paid to the avoidance of malolactic fermentation.
