The wine is made using a select number of white grape varieties grown at Maso Toresella in Trentino, Italy. The vines are trained in the Guyot and spurred cordon methods, with a planting density of 5,550 vinestocks per hectare. Grape production never exceeds 1.3 kg of grapes per vinestock.
A very limited production of 3,000 bottles in the 2015 vintage.
VinificationThe grapes are harvested by hand in mid September. Removal of the stems and crushing of the grapes is followed by cold maceration (10°C) with the must in contact with the skins for 6 hours in order to facilitate aromatic extraction. After this, the must is separated from the solid parts and fermented in steel tanks at controlled temperatures no higher than 18°C. The wine is then refined on its lees until bottling, which takes place at the end of July, when the refining process continues.

NoseComplex and elegant bouquet with fruity notes of fresh citrus and white flesh fruits (Golden Delicious apple, Williams pear and peach), well-combined with tropical notes of pineapple and delicate spicy aromas of sage and field balm.
PalateFlavors echo the aromas; well structured, with exceptional mineral qualities and a harmonious and fresh finish.
