Vinification
The grapes are picked at different stages of ripeness to obtain a fresh, more complex and well-balanced wine. Fermentation at low temperatures of 54-57º F helps to heighten the characteristics of the variety, aromas and freshness. Post-fermentation maceration on the lees protects the wine and its aromas, enhances the palate and achieves a balance of sensations.
