Piedmont¡¯s outstanding Roero wine zone is a seamless succession of hills on the left bank of the Tanaro, between Monferrato and Langhe. This gentle yet wild territory reaches elevations of 1300 feet. The main center of Roero is Canale d¡¯Alba, a farming town with a rich history documented from the early Middle Ages, and home to Cantina Enrico Serafino which was founded in 1878. Today, the winery is noted for its production of the classic Piedmontese wines from the zone, especially Roero, Moscato d¡¯Asti and Nebbiolo, wines that embody the region.
Cantina Enrico Serafino¡¯s vineyards cover the sand and clay hills of Roero. Other grapes are sourced from neighboring zones, Langhe in particular, from where a limited number of carefully selected growers bring fruit from the finest wine areas.
Today, a new, innovative spirit is alive at the Cantina Enrico Serafino, driven by a desire to discover new ways to achieve excellence. The long-established, 6,000 square meter cellar now houses modern vinification equipment with both small and large barrels for aging.

Vinification
After the grapes are hand-harvested, they are soft crushed. Fermentation takes place in stainless steel tanks over eight days at 82¢ªF. An additional four days is spent in post-fermentation maceration at 86¢ªF.
