Zeveri is a prestige cru from north Italy’s Trentino region and the outcome of a special initiative concentrating on territory-specific wines spearheaded by Cavit. No other wine producer in Trentino enjoys greater access to more resources and superb quality vineyard locations than Cavit, which is the region’s preeminent wine producer. Crafted under the supervision of Anselmo Martini, lead winemaker at Cavit, Zeveri takes its name from the word for vats in the traditional dialect of Trentino.
Production Area
Grapes are sourced from five individual vineyards ranging in altitude between 1,700 and 2,300 feet above sea level, farmed by growers in the communes of Cembra, Faver and Lisgnango in Trentino’s Valle di Cembra district.

Vinification
Selected grape bunches are de-stemmed and subjected to a gentle crush. The resulting must is macerated cold, in contact with the skins, 6-8 hours, to facilitate extraction of primary aromas. Fermentation is conducted in temperature-controlled stainless steel vats, where the wine will continue to rest for a brief period to enable further development. After bottling the wine is allowed to mature in the cellars for a brief period prior to release.

Grapes from the Valle di Cembra area are credited with producing particularly fresh, fragrant wines. In this striking example notes of citrus fruit, sage, elderflower and rose combine with a hint of spiciness
Taste
Full-bodied and mineral-rich, with a capacity to evolve with a moderate degree of aging.
Serving Suggestions
A wonderful aperitif and an excellent accompaniment to flavorful hors d'oeuvres. Matchless with shellfish, such as grilled shrimp and lobster, and white-fleshed fish dishes simply prepared with buttery cream sauces.
