New from Boulard, this superior quality Calvados Reserve du Chef has been expressly created for use in the kitchen. Boulard Chefs’ Reserve comes in a convenient 200 ml. bottle finished with a measuring cap closure. For this special blend, Boulard has chosen to highlight the product’s natural fruit character. A booklet attached to each bottle features four original recipe suggestions from the Boulard kitchens in Normandy.
Boulard Calvados is the first name in super-premium Calvados, the celebrated apple-based spirit unique to the Normandy region of France. With a 31% share of the U.S. market and distribution in 60 countries, Boulard is the leading brand of Calvados in the U.S. and worldwide. Founded in the 1820s by Pierre-August Boulard, Boulard is today headed by Vincent Boulard, representing the fifth generation of his family to oversee this historic family business.
Boulard's time-honored reputation begins in the firm's 150 acres of orchards and 35,000 apple trees in the Pays d'Auge, the officially designated source of the finest apples in Normandy. Over 120 varieties of apple, from 800 varieties grown in Boulard's orchards, are selected for production of Boulard Calvados (over twice the number of varieties stipulated by the governing body regulating Calvados production).

Vinification
After harvest the apples are pressed and fermented for 1-3 months. The resulting juices undergo a double distillation in copper stills. Unlike other styles of Boulard Calvados, which are aged in small oak barrels, Boulard Chefs’ Reserve is aged in large oak casks called “muids.” The purpose here is to mute the wood notes in favor of the natural apple aromas and flavors sought for recipe use.
